 Carnival chatter - Chiacchiere di Carnevale


Recipe for approximately 40 pieces:

Ingredients of the Classic shortcrust pastry:
Weak flour “00”   3,5 onces / 100 g
High gluten flour    7 onces / 400 g
Butter    2 onces / 60 g
Sugar           3,2  onces /  90 g
Whole eggs     3
Yolks        1
Pinch of salt
Milk          1/8 cups / 3 cl
Liqueur      1 tablespoon / 1 cl
Icing sugar

Preparation:
Use the planetary mixer with the leaf attachment.
Place all the ingredients and knead.
The dough must be firm.
Let it rest for 1 hour in the fridge.
Roll out the dough with a very thin sheeter.
Make cuts in the center. 
Fry in hot oil at 180° for approximately 1 minute, they will cook very quickly because they are thin.
Place on absorbent paper.
Arrange them on a tray and sprinkle with icing sugar.
